That sweet tang of sourdough… What is sourdough bread and why is it so tasty, boasting such a complex, pungent flavor that makes it truly unique?

The traditional way

Sourdough is the traditional method of bread-making that has been used historically. It’s not just a style of bread; it’s a way to create nutritious and easy-to-digest bread. The ingredients are simple, resulting in the most delicious and nutritious bread available!

Long fermentation

Sourdough involves long fermentation, where time and temperature are crucial elements. This process can take up to 72 hours, allowing the food components in the flour to break down into simpler forms, making the bread easier to digest. Essentially, sourdough unlocks the nutrients that are tightly held in grains, whether they are whole wheat, white, or rye. To fully benefit from the minerals (like iron, magnesium, phosphorus, selenium), vitamins (A, B, E), and nutrients in the grain, fermentation is necessary. It’s the quality of the ingredients and the proper process that make sourdough bread exceptional. Without this careful process, even the best organic or whole grains will not provide maximum nutrition and digestive benefits.

Flavor and taste

As for the flavor and taste, the sourdough process creates bread with a unique tangy flavor, a crusty exterior, and a chewy, airy crumb that has been cherished for generations. The long fermentation enhances the taste and boosts the nutritional profile of the bread, thanks to the wild yeast and lactic acid bacteria involved.

Simple, clean ingredients

I only use flour (all-purpose, bread, whole wheat, or rye), water, salt, and leaven (live starter) to make it, ensuring there are no preservatives or chemical additives, nor processed ingredients. Additionally, my approach to making vegan bread aligns with my belief that crafting bread the sourdough way restores the value of nutritious, healthy, and delicious bread while promoting sustainable living.

Made for our community

I hope that every loaf of sourdough bread I bake for you fosters a sense of community and encourages support for local businesses, like Weston’s Bakery, right in our own neighborhood. If you’re looking for something different, I also offer bagels made with the same dedication to quality and flavor.

My Story

Greetings! I'm Inna. I love baking and cooking. I live with my husband and our two daughters in Weston, where we moved to in 2023. I began baking bread when I realized I missed eating delicious, nutritious, crusty, chewy loaves that I enjoyed growing up. Those loaves were meals unto themselves, and enjoying good bread was part of my everyday life. A few years ago, I developed my very own starter to make 100% wild yeast sourdough loaves. I baked for my family, friends, neighbors, and anyone I knew around. This belief that nutritious and delicious bread, including vegan bread, should be available to more people inspired me to start Baked In Weston, a local bakery focused on providing no preservatives bread to the community. I use basic ingredients and make every loaf by hand in small batches, ensuring they are crafted with clean ingredients and avoiding any additives or enhancers.

I create bread in my kitchen and attend to the dough for 24-72 hours to produce a beautiful and delicious loaf. The process is long, but the result is deeply satisfying. The 100% wild yeast sourdough bread I bake tastes amazing and is wonderfully satiating. I also experiment with bagels to offer a variety of options at Weston's bakery.

I hope you can give it a try and find out for yourself.
